Hello everyone and welcome to One-Way to Health! Here is where you can find a little bit more information about me and why I decided to create this blog.
My name is Monica, I am a nutritionist, food lover, wife and mum of two amazing little fellas. I was born and raised in Italy, but moved to London in 2010 to start my university degree and become a nutritionist…yaaaaay! Despite my interest for a healthy lifestyle, I have always been a sugar and cake lover. In fact, I was about to start a blog about baking, when something unexpected happened: I was diagnosed with Dermatitis Herpetiformis, a not-so-common skin condition associated to coeliac disease. In other words, no more gluten for me! At first I felt like I was on a one-way trip to hell, bye-bye bread, bye-bye soft and buttery cakes, bye-bye doughnuts, bye-bye pizza and the list could go on forever. But then, instead of living surrounded by my own self-pitiness, I decided to take control of the situation and I was determined to make it work: me, Monica, food addict and sugar lover abandoning tasty food? No Way! Surely there must be something I can do, I kept thinking.
So, I started looking in the gluten-free aisles in supermarkets and see what they had to offer. Needless to say, I felt like crying the first time I picked up a loaf of gluten-free bread for £3 that tasted just like cardboard. Over the next months, I tried all sort of gluten-free food available on the shelves, but my food shopping bills were not exactly budget-friendly, as I found myself spending nearly £2 for each bag of flour and other multiple gluten-free items. That’s when I started to reconsider my diet, I have always had a passion for cooking but to be honest never had much experience with cooking healthy. I have always associated eating healthy to eating a bowl of salad, a raw carrot, avoiding cakes and sweets, but eating healthy doesn’t have to be boring nor expensive. I’ve learnt to use new ingredients, new cooking methods, combine new flavours and most of all to find a balance between all the healthy and not-so-healthy foods available out there. I found new ways to save money on food and to feed my whole family healthy and tasty meals without breaking the bank. Because, let’s face it we all have too many expenses already and the last thing we need is a huge food shopping bill.
I decided to start writing this blog, as I wanted to share my knowledge in nutrition and my passion for cooking with all of you. But most of all, I want to show you that eating healthy can be fun and affordable for everyone! I will do my best to keep this blog fun and easy to understand for everyone. My recipes are all easy and quick, because to be honest, two kids are already a lot of work and I don’t have too much time to spend cooking or wandering around in the kitchen. Also, all of my recipes are gluten-free but most of them have ingredients that can be substituted to match your dietary needs. Remember, it’s all about finding your own balance and what works for you, I want all of you to come on this journey with me and discover how food can make you beautiful inside and out!
