Baked Chicken Nuggets

(Gluten Free, Dairy Free)

Coated with crushed cornflakes for extra crunchiness and low in fat, these baked chicken nuggets are a great hit for all those little fussy eaters (and the big ones too)!


The weekend is here and so are the Easter Holidays, at least for us here in the UK. Which means, I will have both kids at home for the next two weeks. I must admit, I am glad I don’t have to do the school runs, but it also means I will have to keep both of them entertained during this time. On Wednesday, I will go to Italy to visit my family and I will be there for just under a week, so that’s one week done! The rest of the holidays, I will just have to improvise, I guess! But I’m not going to worry about that, yet.

Talking about kids, today I have a super kid-friendly recipe I want to share with you: homemade baked chicken nuggets! Oh my, they are super delicious and once you try them I dare you going back to those processed nuggets in the freezer aisle again! I decided to coat them with crushed cornflakes, after I was left with no gluten free breadcrumbs and had a box of cornflakes sitting in the cupboard, in desperate need to be used. Plus, if you can eat gluten, you can pick up a box of basics cornflakes for around 39p! If not, have a look in Poundland, I found my cornflakes there, they are the Nestle’ Harvest Home ones and they are also gluten free. I tried making chicken nuggets once, using polenta, so I thought, well polenta is ground maize, surely cornflakes would work too! And indeed they did! The result is extra crunchy chicken nuggets, that resemble a bit those chicken goujons you can usually find in party food. I baked them, to make them a bit healthier and so that I didn’t have to worry about those nasty free radicals that are usually released during the process of frying.

So, how do you make them? The process is very simple and the result is incredible, so I beg you to give it a try and stay away from those processed pre-fried chicken nuggets! First of all, you will need to crush the cornflakes. To do this, I’ve put mine in a freezer bag, tied it and rolled a rolling pin over, or feel free to hit them if you need to release some stress! 😀


Then, you need to coat the chicken with flour, again you could use a freezer bag, just put the flour in it, add the chicken and shake it to coat all the pieces evenly. Finally, dip each piece of chicken into the egg wash, coat with the crushed cornflakes and lay on a baking tray lined with greased baking paper.


Season with salt and pepper and bake for 20 minutes, turning the chicken halfway through.


Serve with some baked chips or any vegetable you like and enjoy!

Ingredients (serve 4)

  • 400g diced chicken breasts
  • 150g cornflakes
  • 80g flour (use GF flour or cornflour if required)
  • 2 eggs
  • 2-3 Tbsp vegetable oil
  • Salt and pepper, to taste


  1. Preheat the oven to 200C/400F/gas mark 6.
  2. Crush the cornflakes, by putting them in a freezer bag or wrapping them in a tea towel and passing a rolling pin over them, until they are crushed very small.
  3. Put the crushed cornflakes in a bowl. In a different bowl, put the 2 eggs and beat them quickly with a fork.
  4. Put the flour in a freezer bag, together with the chicken and shake well to coat all the chicken pieces. Or, just put the flour in a bowl and coat each chicken piece in it.
  5. Once all the chicken pieces are coated in flour, dip them individually into the egg wash and then coat them with the crushed cornflakes.
  6. Transfer all the chicken nuggets onto a baking tray lined with baking paper previously greased with 1 Tablespoon of oil (you may need two baking trays to fit all of the chicken nuggets).
  7. Season with salt and pepper and drizzle the remaining 1-2 Tbsp of oil over them.
  8. Using your hands, rub the chicken nuggets onto the baking paper and turn them, to make sure they are mostly lightly coated with oil.
  9. Bake in the preheated oven for 20 minutes, turning the chicken nuggets over halfway through.
  10. Serve with any vegetable you like or with baked chips. Enjoy!

  1. I NEVER would have thought of cornflakes – that looks fantastic for breading! I’ve used potato chips, but not quite as healthy. I also like that cereal is vitamin fortified, which is such a big issue for those of us on GF diets. Cool! Thanks!
