A simple and tasty healthy snack, with no sugar or fat added and only 3 ingredients!
Today I want to share with you the perfect sweet fix for all of you who, like me are sugar lovers! These super-simple banana cookies are so healthy and they literally have no extra sugar of fat added! All their sweetness comes from natural ingredients, in this case from the bananas and they make a perfect munch for your little ones as well, as they can be very soft and won’t cause a sugar overdose.
As many of my recipes, these cookies came around in time of necessity, if you can call a sugar craving as such! 😉 I often find myself craving sweet snacks and I try to avoid sugar when I can. For this reason, bananas are always around at my house, I love their sweet and creamy taste and I use them for so many things! However, it comes a point in the life of a banana, where they get too ripe for my taste to be eaten raw. Which means only one thing, it’s time to bake with them! So, I tried to combine them with oats, as I find they make baked goods extremely soft and crispy at the same time, it all depends how long you leave your baked goods in the oven for. To add a bit of crunch to them, I added some crushed walnuts to the cookies, but they can easily be omitted or substituted with raisins or chocolate chips. I really recommend using the walnuts though, it’s the healthier option and I just love that extra crunch!
Talking about their consistency, these cookies can either come out very soft and chewy or more crispy. It all depends how long you let them cook for. The longer they cook, the more crispy they will be. I go with the flow, sometimes I feel like crunchy, sometimes like soft!
How do you make them? Very simple, just mash the bananas, mix with the oats and any extra add-ins you are using, such as walnuts, raisins or chocolate chips or a mix of all and if you like cinnamon, I recommend using a sprinkle of cinnamon as well. Using a spoon lay the mixture on a baking tray, dividing it into 8 flat cookie balls. Bake for 10-18 minutes, depending how crunchy or soft you like them and enjoy!
Ingredients (make about 8 cookies)
- 2 very ripe bananas
- 100g oats
- 2 Tbsp chopped walnuts or raisins, or a mic of both
- a shake of cinnamon (optional)
- Preheat the oven to 350F/180C/gas mark 4.
- Using a fork, mash a banana, then in a bowl mix it with the oats and any add-ins you will be using. Sprinkle a bit of cinnamon as well, if you want,
- Mix well using a spoon, divide the mixture into 8 flat balls and lay them on a greased baking tray.
- Bake for 10-12 minutes for soft and chewy cookies or bake for up to 18 minutes, until golden, for more crunchy cookies.
